Merry Christmas dear readers. Hope your Christmas is full of light and joy. Or that your Hannukah was. Or that your Kwanza will be. Or your Yule. Winter Solstice? Days off eating cake?

I am currently mid-making my first Christmas dinner. I am at the frustrating part where it is too soon to do lots of things, so I am kind of just rearranging them on the counter and peering at the turkey in a slightly worried manner, “excuse me, Tom, are you done yet? I need to put some things in the oven!” Eep.

Here’s what’s done: nothing. But the mashed potatoes will be, the sweet potato casserole just needs to pop in for a moment, a bunch of veggies are just gonna steam away in the microwave. Rolls in the oven, stuffing on the stove top, cranberrry sauce is coming right out of the can.

MERRY CHRISTMAS! What are you up to?

Didn’t take a pictures of today’s chocolate peanut butter brownies… maybe sometime tomorrow before they get consumed…

Here’s what I did:

  • 4 tablespoons butter
  • 6 tablespoons chocolate chips
  • 1 cup sugar
  • 2 eggs
  • 1/2 teaspoon pure vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup flour

Melt butter and chocolate together on stove. Remove from heat, add sugar, eggs, vanilla, salt. Mix in flour. Pour in 8 x8 pan. Melt some peanut butter and butter together in the same pan that was full of chocolate–pour on top of chocolate in pan, swirl. I just used the amount of peanut butter that felt right. My swirl didn’t come out great 😦

Bake at 350 for 20 minutes. Unless your oven is hotter than mine…

Also…I was like…what did I bake last Friday? And then I remembered! Last week was Thanksgiving. Hope you ate lots of turkey and such. I sat around all weekend enjoying not being at work. I have started to dream about work non-stop. I wake up thinking about motions. I dreamt that a litigant got my cell phone number and started calling me at 5AM. I was all “It’s 3AM why are you calling meeeee?” And the litigant was all, “It’s clearly 5AM you should be serving me.” I may be loosing it.
